This scientist is uncovering the “dark matter” in our food | Science News

There’s a whole world of chemicals in our food that we know very little about. Computational physicist Giulia Menichetti is uncovering this “nutritional dark matter” through Foodome, a project that uses AI to map the thousands of chemical compounds found in everyday foods.

The goal is to better understand how these compounds interact with our bodies, how they influence our health and how they could be used to develop new medicines inspired by the chemistry of food.
